Ingredients:

  • 1 tablespoon coconut oil

  • 2 garlic cloves, minced
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon ground turmeric
  • Salt and pepper, to taste
  • 1 can (14 ounces) coconut milk
  • 1 cup vegetable broth
  • 1 block extra firm tofu, cut into small cubes
  • 1 cup frozen peas
  • 1/4 cup chopped fresh cilantro
  • Lime wedges, for serving

Instructions:

  1. Heat the coconut oil in a large pot over medium heat. Add the onion, bell pepper, carrot, ginger, garlic, curry powder, cumin, coriander, turmeric, salt, and pepper. Cook until the vegetables are tender, about 5-7 minutes.

  • 4 cups vegetable broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basilSalt and pepper, to taste
  • Chopped fresh parsley, for serving

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the onion, carrot, celery, and garlic and cook until the vegetables are tender, about 5 minutes.
  2. Stir in the lentils, vegetable broth, tomatoes, oregano, basil, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low and simmer for 30-35 minutes, or until the lentils are tender.
