The strawberry season is in full swing and that means it’s time for a new recipe with the sweet red fruits. 

Today I have the recipe for a strawberry-avocado-salad with whole grain croutons and a delicious strawberry-balsamic-dressing. 

It is a perfect summer salad. It is light, but still filling and, above all, tasty and quick to prepare. 

The basis of the salad are fresh lettuce leaves with cucumber slices, avocado and strawberries. 

The avocado gives the salad a wonderful creaminess and the strawberries ensure pleasant fertility.

As you already know, I love to combine sweet with savoury and strawberries in particular are wonderfully suitable for this. 

The dressing consists of pureed strawberries and, among other things, balsamic vinegar. 

A combination of the pleasant sweetness of the strawberries and the acidity of the balsamic vinegar.

The dressing is prepared super quickly in a mixer and a welcome change from a normal salad dressing. 

Finally, whole grain croutons are added to the salad. These provide a light crunch and make the salad nicely filling. 

You need whole grain bread for the croutons. You can of course use bread you bought, but homemade bread is even better.

So perfect to use this up and turn it into a delicious lunch or dinner. 

The preparation time is very short and at the end you have a fresh salad that also fills you up. Perfect for the strawberry season and to enjoy the little red fruits.

Ingredients salad:

100 g spinach

1/3 cucumber

100 g strawberries

1 avocado

100 g whole wheat bread

Ingredients dressing:

100 g strawberries

2 tbsp olive oil

1 tbsp balsamic vinegar

1 tbsp agave syrup

salt & pepper

Preparation dressing:

  1. Put all liquid ingredients in a blender / multi-chopper and season with salt & pepper. Preparation of the salad:
  2. Wash the spinach and distribute it on the plates. Wash the cucumber, strawberries and avocado, cut each into small pieces and spread on the salad.
  3. Cut the whole wheat bread into small pieces and toast them in a pan without oil. Pour them over the salad and finally garnish / serve the salad with the dressing.
