Oat & raisin cookies

Who doesn’t like Cookies?

We all have our special memories linked to cookies. Christmas cookie decorating sessions, the smell of a freshly backed tray of goodness straight from the oven, dipping a cookie into a glass of milk… Cookies bring back the feeling of happy moments in our lives.  

We often treat ourselves with a cookie, but they can be more than just a sweet sin. Cookies normally contain a lot of sugar and butter, which is not really compatible with an healthy diet. I packed these oat & raisin cookies with good-for-you ingredients. Living a healthy lifestyle is not about cutting out things that we like to eat, it´s about developing them and make them better for our bodies, so we can still have our happy-cookie-moments.

Recipe makes about 12 cookies 

Ingredients 

2 Tbsp                       chia seeds

5 Tbsp                       water 

1 1/2 cups    150 g    rolled oats

4 Tbsp                       whole weed flour   

1/3    cup        90 g    honey (or maple sirup if you want the cookies to be vegan)

1/8    cup        50 g    coconut oil 

1 Tsp                          baking powder 

1 Tsp                          vanilla extract 

1 pinch                       salt   

1/3 cup           60 g     raisins or dried cranberries

1/4 cup           30 g     chopped almonds 

Instructions 

  1. Preheat the oven to 350°F (170°C)
  2. Mix the chia seeds with the water and set aside for five minutes 
  3. Combine all ingredients and mix with your hands until a dough forms 
  4. Line a baking tray with baking paper 
  5. Use an ice cream scoop to portion the cookies and line them up on the tray. Leave a little room between them, because they will spread out a little while baking 
  6. Press the cookies flat with the palm of your hand 
  7. Bake the cookies for about 15-20 minutes until they turn golden brown 
  8. Let them cool down
